These little self-saucing pudding pots are so simple I’m not sure they really need a written recipe, but I thought I’d bang one out anyway. I devised them to be easy, quick and satisfying without requiring any fancy equipment. Unless you class a microwave as fancy. Mine is dirty but definitely not fancy!
They can easily be gluten free (but choose something other than Biscoff Spread) and they’re another recipe I can happily file under ‘Secretly Vegan’.
The amounts below will fill a single GÜ pudding pot ramekin. If you want to make more than one at time you might prefer to air fry or bake them in an oven or steam them on the hob, those timings are below.
INGREDIENTS
• 2 tbsp of soft brown sugar
• 1 tbsp of cocoa powder
• 1 tbsp of plain flour - gluten free works perfectly
• 1/8 of a tsp of baking powder (or two generous pinches)
• 1 small pinch of salt
• 1 tbsp of sunflower oil - you can use any flavourless oil or melted butter if you prefer
• 2 tbsp of water
Filling:
• Biscoff spread / Nutella / peanut butter / a square of chocolate
HOW TO:
• Add the dry ingredients to your pudding pot and mix together, if you haven’t got a GÜ pudding pot you can use a small microwaveable glass or ramekin.
• Add the wet ingredients over the dry and mix well.
• Add a teaspoon (an actual teaspoon, rather than a teaspoon measure) of Biscoff spread to the centre of the pudding batter. You can use other spreads like Nutella or peanut butter, whatever you fancy.
• Microwave until the batter reaches the rim then stop, probably between 20 and 30 seconds. The puddings will carry on cooking after being heated. Let the batter fall and you can decide if it needs a few seconds longer to give you a good balance of cakiness and sauciness.
MICROWAVE WATTAGES
• I’ve noticed that even microwaves labelled with the same wattage will cook differently so you can experiment with how long they need depending on your machine. I can think of worse experiments.
• In a 700 watt microwave I found 30 seconds to be perfect.
• In a 800 watt microwave I found 20 seconds, let the batter fall then another 5 seconds to be spot on.
WITHOUT A MICROWAVE
If you don’t have a microwave or you want to cook more than one pot at a time you can either use a steamer on the hob or bake them in an oven.
AIR FRYER: Preheat if your machine requires it. Put however many pots you want, or can fit, into the machine cook in the bake setting at 170ºC for 8 minutes for saucy and 9 minutes for cakey.
OVEN: Put the pots / ramekins on a baking sheet and bake at 175ºC for 16 minutes for saucy and up to 18 minutes for more cakey.
STEAMER: Put the pots in a suitable stove-top steamer and steam for 16 minutes for saucy and up to 18 minutes for more cakey.
